- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup cocoa powder
- 3/4 cup butter, softened
- 2 cups packed brown sugar
- 4 eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 24 muffin cups.
- Sift together the flour, baking powder, baking soda, salt and cocoa powder. Set aside.
- In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time.
- Mix in the sour cream and vanilla extract.
- Gradually blend in the dry ingredients.
- Fill each muffin cup 3/4 full with batter.
- Bake for 20 to 25 minutes in preheated oven, or until a toothpick inserted into center of a cupcake comes out clean.
- Let cool before frosting with your favorite peanut butter frosting.
