- 4 large eggs, separated
- 1/2 cup sugar
- 1/4 teaspoon cream of tartar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- In a medium bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add the sugar and continue to beat until stiff peaks form.
- In a separate bowl, whisk together the egg yolks, cocoa powder, vanilla extract and salt.
- Fold the egg yolk mixture into the egg whites until combined.
- Spoon into individual serving dishes and chill for at least 2 hours before serving.
