Chocolate Cupcakes
Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup butter, melted and cooled slightly
  • 2 cups granulated sugar
  • 3 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup buttermilk, at room temperature

Steps
  1. Preheat oven to 350 degrees F. Line two standard muffin tins with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder and salt.
  3. In a large bowl, add the melted butter and sugar. Whisk until combined.
  4. Add eggs one at a time, whisking after each addition.
  5. Add vanilla extract and mix until combined.
  6. Alternate adding the dry ingredients with the buttermilk to the wet ingredients.
  7. Divide batter evenly among muffin tins and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before frosting.
