- 1/2 cup vegetable oil
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 2 large eggs, room temperature
- 3/4 cup buttermilk, room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup cocoa powder
- Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the oil, flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk together the eggs, buttermilk and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined.
- Add in the cocoa powder and whisk until there are no lumps.
- Divide the batter evenly among the muffin cups. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in pan for 5 minutes before transferring to a cooling rack.
- Once cooled completely, frost with your favorite vanilla frosting.
