Chocolate Cupcake…
Ingredients
  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 large eggs, room temperature
  • 3/4 cup buttermilk, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup cocoa powder

Steps
  1. Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the oil, flour, sugar, baking powder, baking soda and salt.
  3. In a medium bowl, whisk together the eggs, buttermilk and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined.
  5. Add in the cocoa powder and whisk until there are no lumps.
  6. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in pan for 5 minutes before transferring to a cooling rack.
  8. Once cooled completely, frost with your favorite vanilla frosting.
