- 1 cup dates
- 1 cup rolled oats
- 1/2 cup shredded coconut
- 3 tablespoons cocoa powder
- 3 tablespoons almond butter
- 1 teaspoon vanilla extract
- In a food processor, pulse the dates until they are broken down into small pieces.
- Add the oats and coconut and pulse until combined.
- Add the cocoa powder, almond butter and vanilla extract and pulse until everything is combined.
- Form into 1-inch balls and place on a parchment-lined baking sheet.
- Refrigerate for 30 minutes before serving.
