- 2 cups all-purpose flour
- 3/4 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 1 egg
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with muffin liners.
- In a large bowl, combine flour, sugar, baking powder and salt. Make a well in the center and pour in oil, egg, milk and vanilla; mix until smooth.
- Fold in chocolate chips.
- Fill muffin cups right to the top, and sprinkle with a few extra chocolate chips.
- Bake for 20 to 25 minutes in the preheated oven, or until done.
