- 2 cups rolled oats
- 1 cup almonds, chopped
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup semi-sweet chocolate chips
- Preheat oven to 350 degrees F.
- In a large bowl, combine rolled oats and almonds.
- In a separate bowl, mix together honey, melted coconut oil, salt and vanilla extract.
- Add wet ingredients to the dry ingredients and mix until everything is combined.
- Fold in chocolate chips.
- Line an 8x8 inch baking dish with parchment paper.
- Press granola mixture into the pan and bake for 20 minutes or until golden brown.
- Let cool completely before cutting into bars.
