- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons white sugar
- 2 eggs, separated
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
- In a large bowl, mix together the flour, baking powder, salt and sugar.
- In a separate bowl, beat together the egg yolks and milk.
- Stir in the oil and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Fold the egg whites into the batter.
- Fold in the chocolate chips.
- Heat a waffle iron to medium-high heat and lightly grease with cooking spray or butter.
- Scoop 1/4 cup of batter onto each section of waffle iron. Close lid and cook for about 5 minutes or until golden brown. Serve hot.
