Ingredients
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons white sugar
  • 2 eggs, separated
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips

Steps
  1. In a large bowl, mix together the flour, baking powder, salt and sugar.
  2. In a separate bowl, beat together the egg yolks and milk.
  3. Stir in the oil and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Fold the egg whites into the batter.
  7. Fold in the chocolate chips.
  8. Heat a waffle iron to medium-high heat and lightly grease with cooking spray or butter.
  9. Scoop 1/4 cup of batter onto each section of waffle iron. Close lid and cook for about 5 minutes or until golden brown. Serve hot.
