- 2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup melted butter or margarine
- 2 eggs, beaten
- 3/4 cup white sugar
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin or line with paper muffin liners.
- In a large bowl, mix together the flour, cocoa powder, baking soda and salt.
- In a separate bowl, beat together the melted butter or margarine, eggs, sugar and vanilla extract until creamy.
- Stir in the mashed bananas.
- Add the banana mixture to the flour mixture and stir just until moistened.
- Fill muffin cups 2/3 full.
- Bake for 20 to 25 minutes in the preheated oven. Muffins are done when a toothpick inserted into one of the center muffins comes out clean.
