In a large skillet, heat the sesame oil over medium-high heat. Add the pork and cook until browned. Add the onion, garlic, and ginger and cook for an additional 2 minutes.
Add the cabbage, carrots, soy sauce, salt and pepper to taste. Cook for an additional 3 minutes or until vegetables are tender.
Remove from heat and let cool for 10 minutes. Preheat oven to 375°F.
Fill each egg roll wrapper with about 2 tablespoons of filling. Roll up tightly and seal with a bit of water.
Place on a greased baking sheet. Bake for 15-20 minutes or until golden brown.
