- 2 cups cooked rice
- 2 eggs, beaten
- 1/4 cup onion, diced
- 1/4 cup frozen peas and carrots, thawed
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- Heat oil in a large skillet over medium heat. Add onion and cook until softened.
- Push the onion to one side of the pan and add beaten eggs. Scramble until cooked.
- Add peas and carrots and cook until heated through.
- Stir in cooked rice and soy sauce. Cook for an additional 3-5 minutes, stirring occasionally.
