Ingredients
  • 2 cups cooked rice
  • 2 eggs, beaten
  • 1/4 cup onion, diced
  • 1/4 cup frozen peas and carrots, thawed
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce

Steps
  1. Heat oil in a large skillet over medium heat. Add onion and cook until softened.
  2. Push the onion to one side of the pan and add beaten eggs. Scramble until cooked.
  3. Add peas and carrots and cook until heated through.
  4. Stir in cooked rice and soy sauce. Cook for an additional 3-5 minutes, stirring occasionally.
