Chickpea Falafel …
Ingredients
  • 1 can chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking soda
  • Salt and pepper to taste

Steps
  1. In a food processor, combine the chickpeas, garlic, parsley and cilantro. Pulse until combined but still slightly chunky.
  2. Add the olive oil, lemon juice, cumin, coriander and baking soda. Pulse until everything is combined.
  3. Form the mixture into patties (about 1/4 cup of mixture per patty) and place on a greased baking sheet.
  4. Bake at 375°F for 15-20 minutes or until golden brown.
  5. Serve with desired accompaniments.
