- 1 can chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking soda
- Salt and pepper to taste
- In a food processor, combine the chickpeas, garlic, parsley and cilantro. Pulse until combined but still slightly chunky.
- Add the olive oil, lemon juice, cumin, coriander and baking soda. Pulse until everything is combined.
- Form the mixture into patties (about 1/4 cup of mixture per patty) and place on a greased baking sheet.
- Bake at 375°F for 15-20 minutes or until golden brown.
- Serve with desired accompaniments.
