Chickpea Burgers
Ingredients
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup cooked brown rice
  • 1/4 cup minced red onion
  • 1/4 cup minced fresh parsley leaves
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt

Steps
  1. In a medium bowl, mash the chickpeas with a fork until they are mostly mashed.
  2. Add the brown rice, onion, parsley, garlic, cumin, paprika and salt to the bowl and mix until everything is combined.
  3. Form the mixture into four patties.
  4. Heat a large skillet over medium heat and spray with cooking oil.
  5. Cook the patties for 4-5 minutes per side or until lightly golden brown.
  6. Serve on buns with your favorite toppings.
