Chicken Tortilla …
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 2 (14.5 ounce) cans diced tomatoes with green chiles, undrained
  • 2 cups cooked chicken breast, shredded or cubed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup frozen corn kernels

Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic and jalapeno pepper. Cook until the vegetables are tender.
  3. Stir in the cumin and chili powder. Cook for 1 minute.
  4. Add the chicken broth and tomatoes. Bring to a boil.
  5. Reduce heat to low and simmer for 15 minutes.
  6. Stir in the chicken, beans and corn. Simmer for 10 minutes or until heated through.
  7. Serve with desired toppings such as cheese, sour cream, avocado or tortilla chips.
