Chicken Stew with…
Ingredients
  • 1 lb. chicken thighs, boneless and skinless
  • 1/2 lb. chorizo sausage, diced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, sliced into rounds
  • 3 potatoes, cubed
  • 1 can (14.5 oz.) diced tomatoes with juice
  • 1 cup chicken broth or stock
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Steps
  1. In a large pot or Dutch oven over medium-high heat, cook the chicken until browned on both sides. Remove from the pot and set aside.
  2. Add the chorizo to the pot and cook until browned. Add garlic and onion and cook until softened.
  3. Add carrots, potatoes, tomatoes with juice, broth or stock and bay leaves to the pot. Bring to a boil then reduce heat to low.
  4. Return chicken to the pot and add paprika. Simmer for 30 minutes or until vegetables are tender.
  5. Season with salt and black pepper before serving.
