Chicken Soup
Ingredients
  • 1 whole chicken
  • 2 onions, diced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 3 quarts chicken broth

Steps
  1. In a large pot over medium-high heat, add the chicken, onions, carrots and celery. Cook for 5 minutes.
  2. Add the thyme and bay leaf. Pour in the chicken broth and bring to a boil.
  3. Reduce heat to low and simmer for 1 hour.
  4. Remove the chicken from the pot and shred it with two forks. Return it to the pot.
  5. Simmer for an additional 30 minutes.
  6. Serve hot. Enjoy!
