- 1 whole chicken
- 2 onions, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 bay leaf
- 3 quarts chicken broth
- In a large pot over medium-high heat, add the chicken, onions, carrots and celery. Cook for 5 minutes.
- Add the thyme and bay leaf. Pour in the chicken broth and bring to a boil.
- Reduce heat to low and simmer for 1 hour.
- Remove the chicken from the pot and shred it with two forks. Return it to the pot.
- Simmer for an additional 30 minutes.
- Serve hot. Enjoy!
