- 2 tablespoons butter
- 1 onion, diced
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 cups chicken broth
- 2 cups cubed cooked chicken breast
- 1 cup frozen mixed vegetables (carrots, peas and corn)
- 1/2 cup frozen green beans
- Preheat oven to 375 degrees F (190 degrees C).
- Melt butter in a large skillet over medium heat. Add onion and cook until tender.
- Stir in flour, salt and pepper until blended. Gradually stir in chicken broth.
- Bring to a boil, reduce heat, and simmer 10 minutes.
- Stir in chicken, mixed vegetables and green beans; cook 5 minutes.
- Pour into a 9 inch deep-dish pie plate.
- Top with pastry crust.
- Bake at 375 degrees F (190 degrees C) for 30 minutes or until crust is golden brown.
