Chicken Pot Pie
Ingredients
  • 2 tablespoons butter
  • 1 onion, diced
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 cups chicken broth
  • 2 cups cubed cooked chicken breast
  • 1 cup frozen mixed vegetables (carrots, peas and corn)
  • 1/2 cup frozen green beans

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Melt butter in a large skillet over medium heat. Add onion and cook until tender.
  3. Stir in flour, salt and pepper until blended. Gradually stir in chicken broth.
  4. Bring to a boil, reduce heat, and simmer 10 minutes.
  5. Stir in chicken, mixed vegetables and green beans; cook 5 minutes.
  6. Pour into a 9 inch deep-dish pie plate.
  7. Top with pastry crust.
  8. Bake at 375 degrees F (190 degrees C) for 30 minutes or until crust is golden brown.
