Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • 4 cups chicken broth
  • 2 cups cooked, shredded chicken breast
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas, thawed
  • 1/4 cup heavy cream (optional)

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 3 minutes until softened.
  2. Add the flour and thyme and stir to combine. Cook for 1 minute.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  4. Add the cooked chicken, carrots, celery and peas. Simmer for 10 more minutes or until vegetables are tender.
  5. Stir in the heavy cream if desired. Serve hot.
