Chicken Piccata
Ingredients
  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/3 cup fresh lemon juice
  • 3 tablespoons capers, drained and rinsed

Steps
  1. Place chicken between two pieces of wax paper. Pound lightly with a meat tenderizer until the chicken is an even thickness.
  2. In a shallow dish, mix together the flour, salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Dredge chicken breasts in the flour mixture and place in the hot skillet.
  4. Cook for 3 to 4 minutes per side or until golden brown and cooked through. Remove from skillet and keep warm.
  5. Add garlic to skillet and cook for 1 minute. Pour in wine and lemon juice; bring to a boil.
  6. Stir in capers; reduce heat to low and simmer for 5 minutes or until sauce has thickened slightly.
  7. Return chicken to skillet; spoon sauce over chicken breasts. Simmer for an additional 3 minutes or until heated through.
  8. Serve with your favorite side dish.
