- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 8 cups chicken broth
- 2 boneless skinless chicken breasts, cut into cubes
- 4 ounces egg noodles
- Salt and pepper to taste
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
- Add the carrots and celery and cook for 5 minutes.
- Stir in the thyme, chicken broth, and chicken. Bring to a boil.
- Reduce heat to low and simmer for 15 minutes.
- Add the egg noodles and cook for an additional 10 minutes or until noodles are tender.
- Season with salt and pepper to taste.
