Chicken Marsala
Ingredients
  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 8 ounces fresh mushrooms, sliced

Steps
  1. Place the chicken breasts between two pieces of plastic wrap and pound with a meat mallet until they are an even thickness.
  2. In a shallow dish, mix together the flour, salt and pepper.
  3. Dredge the chicken breasts in the flour mixture until they are evenly coated.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the chicken breasts to the skillet and cook for 4 minutes per side or until cooked through.
  6. Remove the chicken from the skillet and set aside on a plate.
  7. Add the Marsala wine to the skillet and cook for 1 minute or until reduced by half.
  8. Stir in the chicken broth and butter. Cook for 2 minutes or until slightly thickened.
  9. Add garlic and mushrooms to skillet. Cook for 3 minutes or until mushrooms are tender.
  10. Return chicken to skillet. Cover with sauce. Simmer for 5 minutes or until heated through.
