Chicken Jambalaya
Ingredients
  • 1 lb chicken breasts, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups long-grain white rice
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Steps
  1. In a large pot over medium heat, add the chicken and cook until lightly browned. Add the onion and garlic and cook for 2 minutes.
  2. Add the bell pepper and cook for an additional 2 minutes.
  3. Add the rice, chicken broth, tomatoes with juice, oregano and thyme. Stir to combine.
  4. Bring to a boil then reduce heat to low. Cover and simmer for 20 minutes or until the rice is cooked through.
  5. Remove from heat and let stand covered for 5 minutes before serving.
