Chicken Fried Rice
Ingredients
  • 2 cups cooked chicken, diced
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas and carrots, thawed
  • 3 cups cooked white rice
  • 3 tablespoons soy sauce

Steps
  1. Heat oil in a large skillet over medium-high heat. Add onion and garlic; cook until softened, about 3 minutes. Add chicken, peas and carrots; cook until heated through, about 5 minutes. Add rice and soy sauce; cook until heated through and lightly browned, about 5 minutes more.
  2. Serve hot.
