Ingredients
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 boneless skinless chicken breasts, cut into small cubes
  • 8 flour tortillas (6-inch size)
  • 3 cups shredded Mexican cheese blend

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for about 5 minutes until softened.
  2. Add the garlic, cumin, chili powder, salt and pepper. Cook for 1 minute until fragrant.
  3. Add the chicken and cook for 5-7 minutes until cooked through.
  4. To assemble the quesadillas: Place 4 of the tortillas on a work surface. Sprinkle 1/2 cup of cheese over each tortilla. Top with cooked chicken mixture and remaining cheese.
  5. Top with remaining tortillas. Heat a large skillet over medium heat. Place one quesadilla in the pan and cook for 2-3 minutes per side until golden brown and cheese is melted.
  6. Repeat with remaining quesadillas.
  7. Cut each quesadilla into wedges and serve warm.
