- 2 tablespoons olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow onion, thinly sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cloves garlic, minced
- 1 pound boneless skinless chicken breasts, cut into strips
- Salt and pepper to taste
- 4 large flour tortillas
- Heat olive oil in a large skillet over medium-high heat.
- Add bell peppers and onion; cook until soft, about 5 minutes.
- Add chili powder, cumin and garlic; cook for 1 minute.
- Add chicken strips; season with salt and pepper. Cook until chicken is no longer pink inside, about 5 minutes.
- Warm the tortillas in the microwave for 30 seconds. Divide chicken mixture evenly among the tortillas. Roll up the burritos and serve.
