Ingredients
  • 1 lb. boneless, skinless chicken breasts, cut into strips
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Steps
  1. Heat olive oil in a large skillet over medium-high heat. Add chicken strips and season with chili powder, cumin, salt and pepper.
  2. Cook chicken until golden brown and cooked through, about 8 minutes.
  3. Add bell peppers and onions to the skillet. Cook until vegetables are softened and lightly charred around the edges.
  4. Serve chicken fajita mixture over cooked rice or in a burrito bowl with your favorite toppings.
