- 1 lb. boneless, skinless chicken breasts, cut into strips
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Heat olive oil in a large skillet over medium-high heat. Add chicken strips and season with chili powder, cumin, salt and pepper.
- Cook chicken until golden brown and cooked through, about 8 minutes.
- Add bell peppers and onions to the skillet. Cook until vegetables are softened and lightly charred around the edges.
- Serve chicken fajita mixture over cooked rice or in a burrito bowl with your favorite toppings.
