- 1 tablespoon olive oil
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 pound boneless skinless chicken breasts, cut into strips
- 3-4 cups cooked rice or quinoa
- Optional toppings: shredded cheese, guacamole, salsa
- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened.
- Stir in chili powder, cumin, salt and pepper. Add the garlic and cook for one minute.
- Add the chicken strips and cook until golden brown and cooked through.
- Divide cooked rice or quinoa among four bowls. Top each bowl with chicken fajitas. Serve with optional toppings.
