Ingredients
  • 1 tablespoon olive oil
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 3-4 cups cooked rice or quinoa
  • Optional toppings: shredded cheese, guacamole, salsa

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened.
  2. Stir in chili powder, cumin, salt and pepper. Add the garlic and cook for one minute.
  3. Add the chicken strips and cook until golden brown and cooked through.
  4. Divide cooked rice or quinoa among four bowls. Top each bowl with chicken fajitas. Serve with optional toppings.
  5. Enjoy!
