- 2 cups all-purpose flour
- 3/4 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, melted and cooled slightly
- 1 cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup fresh cherries, pitted and halved
- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- In a large bowl, mix together the flour, sugar, baking powder and salt.
- In a separate bowl, mix together the melted butter, milk, egg and vanilla.
- Stir the wet ingredients into the dry ingredients just until blended.
- Fold in the cherries. Spoon batter into prepared muffin cups.
- Bake for 18 to 20 minutes in preheated oven. Muffins are done when they spring back when lightly pressed.
- Cool in pan for 10 minutes before removing to cool completely on a wire rack.
