Cherry Muffins
Ingredients
  • 2 cups all-purpose flour
  • 3/4 cup white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted and cooled slightly
  • 1 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and halved

Steps
  1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. In a large bowl, mix together the flour, sugar, baking powder and salt.
  3. In a separate bowl, mix together the melted butter, milk, egg and vanilla.
  4. Stir the wet ingredients into the dry ingredients just until blended.
  5. Fold in the cherries. Spoon batter into prepared muffin cups.
  6. Bake for 18 to 20 minutes in preheated oven. Muffins are done when they spring back when lightly pressed.
  7. Cool in pan for 10 minutes before removing to cool completely on a wire rack.
