- 4 cups grated zucchini
- 1/4 teaspoon salt
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup bread crumbs
- Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
- In a medium bowl, mix together the zucchini, salt, Parmesan cheese and flour. Stir in the eggs until everything is evenly blended.
- Shape into small patties and roll in bread crumbs.
- Place on the baking sheet and bake for 15 minutes in the preheated oven, or until golden brown.
