Cheesy Potato Soup
Ingredients
  • 6 large potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups milk
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups shredded Cheddar cheese

Steps
  1. In a large saucepan, bring potatoes to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.
  2. In a small saucepan, melt butter. Stir in flour until smooth; gradually add the broth and milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
  3. Stir into potatoes. Add salt and pepper. Cook over medium heat for 5 minutes or until heated through.
  4. Stir in cheese until melted.
  5. Serve warm.
