Cheesy Potato Skiā€¦
Ingredients
  • 4 large potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese

Steps
  1. Preheat the oven to 425 degrees F.
  2. Scrub the potatoes and pat dry.
  3. Poke a few holes in each potato with a fork.
  4. Brush each potato with olive oil and sprinkle with salt and pepper.
  5. Bake for 45-50 minutes, until golden brown and tender.
  6. Let cool slightly, then cut each potato in half lengthwise.
  7. Scoop out the flesh, leaving about 1/4 inch of potato in the skin.
  8. Brush the inside of each skin with olive oil and sprinkle with salt and pepper.
  9. Bake for 10-15 minutes, until crispy and golden brown.
  10. Sprinkle the cheese over the skins and bake for an additional 5 minutes, until melted.
  11. Serve warm.
