- 4 large potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese
- Preheat the oven to 425 degrees F.
- Scrub the potatoes and pat dry.
- Poke a few holes in each potato with a fork.
- Brush each potato with olive oil and sprinkle with salt and pepper.
- Bake for 45-50 minutes, until golden brown and tender.
- Let cool slightly, then cut each potato in half lengthwise.
- Scoop out the flesh, leaving about 1/4 inch of potato in the skin.
- Brush the inside of each skin with olive oil and sprinkle with salt and pepper.
- Bake for 10-15 minutes, until crispy and golden brown.
- Sprinkle the cheese over the skins and bake for an additional 5 minutes, until melted.
- Serve warm.
