- 2 cups mashed potatoes
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 tablespoon butter, melted
- 3 tablespoons grated Parmesan cheese
- 1 egg, lightly beaten
- In a medium bowl, combine mashed potatoes, flour and baking powder. Stir in melted butter, Parmesan cheese and egg.
- Heat a lightly greased skillet over medium heat.
- Drop potato mixture by 1/4 cupfuls onto the skillet and flatten slightly. Cook until golden brown on both sides.
- Serve hot.
