- 3 cups potatoes, peeled and diced
- 1 cup onion, finely chopped
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese
- In a large skillet, heat butter over medium heat.
- Add potatoes and onion. Cook for 10 minutes or until potatoes are tender.
- Add garlic, salt and pepper. Cook for an additional 5 minutes.
- Stir in cheese; cook until melted.
