Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
In a shallow bowl or plate, combine flour, garlic powder, onion powder, paprika, cayenne pepper, salt and black pepper.
In a separate shallow bowl or plate, beat eggs.
In a large shallow bowl or plate, combine panko breadcrumbs and 2 cups of the cheese.
Dredge chicken cubes in the flour mixture to coat. Dip each piece of chicken into the egg mixture and then into the panko mixture. Place coated chicken pieces in the prepared baking dish.
Bake in preheated oven for 25 minutes. Sprinkle remaining 1 cup cheese over chicken pieces. Bake for an additional 5 minutes or until golden brown and cooked through.
