- 4 pounds russet potatoes, peeled and cubed
- 1/2 cup butter
- 1/2 cup sour cream
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cups shredded Cheddar cheese
- Place potatoes in a large pot and cover with cold water. Bring to a boil over high heat and cook for 15 minutes or until tender.
- Drain the potatoes and return them to the pot.
- Add butter, sour cream, garlic, salt, and pepper. Mash until smooth.
- Stir in Cheddar cheese until melted.
- Serve hot.
