Cheesy Cornbread …
Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs, beaten
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 3/4 cup shredded cheddar cheese

Steps
  1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
  2. In a large bowl, mix together the cornmeal, flour, baking powder, salt and sugar.
  3. In a medium bowl, whisk together the eggs, milk and oil. Stir into the dry ingredients just until moistened.
  4. Fold in cheese.
  5. Spoon batter into prepared muffin cups.
  6. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
