- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoons sugar
- 2 eggs, beaten
- 3/4 cup milk
- 1/4 cup vegetable oil
- 3/4 cup shredded cheddar cheese
- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
- In a large bowl, mix together the cornmeal, flour, baking powder, salt and sugar.
- In a medium bowl, whisk together the eggs, milk and oil. Stir into the dry ingredients just until moistened.
- Fold in cheese.
- Spoon batter into prepared muffin cups.
- Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
