- 1 cup uncooked white rice
- 2 tablespoons butter
- 1/2 onion, diced
- 2 cloves garlic, minced
- 3 cups broccoli florets
- 2 cups chicken broth or stock
- 1 1/2 cups shredded cheddar cheese
- In a large pot, melt the butter over medium heat. Add in the onion and garlic and cook until softened, about 3 minutes.
- Add in the rice and stir to coat with the butter. Cook for 1 minute.
- Add in the broccoli and stir to combine. Pour in the chicken broth and bring to a boil.
- Reduce heat to low and cover. Simmer for 18-20 minutes or until all liquid is absorbed.
- Remove lid and stir in cheese. Cover for an additional 2 minutes or until cheese is melted.
- Serve hot.
