- 1 lb. ground beef
- 1/2 cup chopped onion
- 1/4 cup water
- 1 envelope taco seasoning mix
- 10 oz. can diced tomatoes and green chilies, undrained
- 1 cup frozen corn, thawed
- 2 cups cooked rice
- 2 cups shredded cheddar cheese
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
- Stir in water and taco seasoning mix; bring to a boil.
- Reduce heat; simmer, uncovered, for 5 minutes.
- Stir in tomatoes, corn and rice; cook for 2-3 minutes or until heated through.
- Sprinkle with cheese; cover and let stand until cheese is melted.
- Serve with your favorite toppings if desired.
