Cheesy Beef Taco …
Ingredients
  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/4 cup water
  • 1 envelope taco seasoning mix
  • 10 oz. can diced tomatoes and green chilies, undrained
  • 1 cup frozen corn, thawed
  • 2 cups cooked rice
  • 2 cups shredded cheddar cheese

Steps
  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
  2. Stir in water and taco seasoning mix; bring to a boil.
  3. Reduce heat; simmer, uncovered, for 5 minutes.
  4. Stir in tomatoes, corn and rice; cook for 2-3 minutes or until heated through.
  5. Sprinkle with cheese; cover and let stand until cheese is melted.
  6. Serve with your favorite toppings if desired.
