- 4 large russet potatoes
- 1/2 cup butter, melted
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- salt and pepper to taste
- Preheat oven to 350 degrees F (175 degrees C).
- Scrub the potatoes and pat dry.
- Poke a few holes in each potato with a fork.
- Place potatoes on a baking sheet.
- Brush melted butter onto each potato.
- Bake for 1 hour or until potatoes are tender.
- Remove from oven and let cool for 5 minutes.
- Cut potatoes in half lengthwise.
- Scoop out the insides of each potato into a medium bowl, leaving about 1/4 inch of flesh in the skin.
- Add sour cream, cheese, garlic powder, salt, and pepper to the potato mixture; mix together until well blended.
- Spoon mixture back into each potato skin. Top with extra cheese if desired.
- Bake for an additional 20 minutes or until cheese is melted and bubbly. Enjoy!
