Preheat oven to 425°F. Line a baking sheet with parchment paper or foil.
Cut potatoes into wedges. Place in a large bowl and drizzle with olive oil. Add garlic powder, onion powder, smoked paprika, salt and pepper and toss to combine.
Arrange potato wedges on the prepared baking sheet in a single layer. Bake for 25 minutes.
Sprinkle cheese over the top of the potato wedges and bake for an additional 5 minutes until cheese is melted.
