- 4 large potatoes
- 1/2 cup shredded Cheddar cheese
- 1/4 cup crumbled bacon
- 1/4 cup chopped green onions
- Preheat oven to 375°F.
- Scrub potatoes and pierce with a fork.
- Bake in preheated oven for 1 hour or until tender.
- Cut potatoes in half lengthwise. Scoop out insides, leaving a thin shell.
- Sprinkle potato skins with cheese, bacon and green onions.
- Bake for an additional 15 minutes or until cheese is melted and bubbly.
- Serve warm.
