- 4 slices bacon
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 3 cups cubed potatoes
- 1 cup shredded cheddar cheese
- 1/4 teaspoon ground black pepper
- In a large pot over medium heat, cook bacon until crisp. Remove bacon from pot, crumble and set aside.
- Add onion to the pot and cook until softened. Add garlic and cook for one minute.
- Sprinkle flour over the top and stir to combine.
- Slowly pour in chicken broth, stirring constantly.
- Add potatoes and bring to a boil. Reduce heat to low and simmer for 10 minutes or until potatoes are tender.
- Stir in cheese and season with pepper. Simmer for an additional 5 minutes or until cheese is melted.
- Serve topped with crumbled bacon.
